Ingredients
- 1 Pepper
- 1 Onion
- 1 Spring Onion
- 1 Tbsp Pimento
- 1 Beef Stock Cube
- 1 Kg Oxtail
- 3 Cloves Garlic
- 1 Tbsp Dark Soy Sauce
- 1 Tin Butter Beans
Instructions
- Remove the Fat from the Oxtail and Wash
- In a food processor, add the pepper, onion, spring onion & garlic. Blend together
- Add this blend to the Oxtail with the beef stock cube and Soy Sauce. Massage into the meat and leave overnight to marinate
- Add the Oxtail to a pan and fry for 3-4 minutes until browned. Then add 1 Cup of water and leave to simmer on a low heat for 2 hrs. After 2 hrs add the butter beans and cook for another 30 min
