Oxtail

Ingredients
  

  • 1 Pepper
  • 1 Onion
  • 1 Spring Onion
  • 1 Tbsp Pimento
  • 1 Beef Stock Cube
  • 1 Kg Oxtail
  • 3 Cloves Garlic
  • 1 Tbsp Dark Soy Sauce
  • 1 Tin Butter Beans

Instructions
 

  • Remove the Fat from the Oxtail and Wash
  • In a food processor, add the pepper, onion, spring onion & garlic. Blend together
  • Add this blend to the Oxtail with the beef stock cube and Soy Sauce. Massage into the meat and leave overnight to marinate
  • Add the Oxtail to a pan and fry for 3-4 minutes until browned. Then add 1 Cup of water and leave to simmer on a low heat for 2 hrs. After 2 hrs add the butter beans and cook for another 30 min
